When we extract the .car file from our support pack, we get .att and .pat files. What data do these files contain?

The .att and .pat files are the support package itself. Support packages should be extracted in the transport directory (usually /usr/sap/trans). When extracted, they reside in the "EPS/in" directory from which they can be applied in the SAP system via the Support Package Manager (transaction SPAM).
